ACP >> Users and Group Tab >> Custom Profile fields link on left >> Click the appropriate red circle with X to delete

I think that'll do; They may be concerned by the 'Religion' section, but when they see no one has that on their profile I figure they'll assume it isn't relevant to discussion.

It shouldn't appear on sign up either, it's just something you can find if you go into your profile. You don't have to set it, it's not a required field.
