When they're baked like that, they become a little crunchy. It's like a snack food. Like a bag of small pretzels or... I don't really know what's like that in terms of being dense and crunchy other than wasabi peas.
You could make something of a "trail mix" out of it.
Add some nuts, maybe raisins?

It is, that's why I'm wondering whether it could count as a full lunch meal.

No vegetables?
May I ask what you eat for lunch? (since you seem to eat lots of beans)

Why can't a large quantity of various healthy snacks be a meal?

Well, ideally, you pack another baggie with some carrots, celery, etc.
But don't put them together, because the veggies are wet, they will make your dry snacks soggy and your dry snacks will dry out your veggies.

I don't usually pack lunch. If I go out and about, I will usually eat a larger breakfast, and then eat when I get home.

Because it's important for a diet to be balanced. If your lunches are only made out of beans, I'm not sure you get enough of every vitamin and mineral you should get.

Not the "various" in there.
Mixing and matching is the best bet. If you can find enough dry items, a "trail mix" including beans, nuts, and a little dried fruit can be great.
Wet items like cut veggies should go in a different bag, but are also great to bring with you and eat together.
