The video was kind of weak. Sure, you can eat botanical fruits and tubers instead of leaves/stems if you want. You won't drop dead suddenly because you ate fruits and roots instead of leaves.
The only vegetables (in terms of leaves stems, vs. fruits and tubers) that are really super good for you are certain cruciferous veggies. I would recommend eating some of those (like broccoli, collard greens, and red cabbage), but you don't have to if you really don't like them.
Most lettuce isn't very useful, beyond the texture it adds to sandwiches (that is, it's mostly "good" to eat because it's delightfully crunchy, not because is does much for you).
It's bullshit that vegetables don't taste good, though. Basil? Oregano? Chives? Rosemary? Dill? Herbs are da bomb. Even cinnamon is a vegetable (stem, the bark).
Sure, you could make do with non-vegetable flavorings like peppers (fruit and seed), garlic, onion, and ginger (tubers), but excluding vegetables from your diet would be a huge culinary sacrifice.
While celery might not be a superstar when it's raw, a soup without celery for its rich salty base flavors is very sad. And don't forget bay leaves.
It's also nonsense that kids don't like veggies... some kids in some cultures just don't like the way their parents serve certain vegetables. Big difference.
